I have not made this dish in a very long time, as no one but me likes it in the family. I love seafood an squid made correctly I love!
This dish came from a simple recipe my mother used to make, although she did not like it either, she is not a big fan of seafood yet she loves fried swordfish which I do not care for cause of all the needles.
Anyway here is the recipe for whomever wants it
I used here about one quarter cup of EVOO heated in pot then 1 large green pepper and one medium onion and about 7 cloves of garlic, 1 can of Squid in it’s own ink.
Put all through the mini food processor (except squid) and put in heated oil, sprinkled black pepper then added one can of Calamares (Squid) in it’s own ink, covered, cooked on low heat till tender about 6 mins
Then after rinsing 3 cups of white rice I added 3 and a half cups of water to rice,salt to taste and poured in the pot with the rest of the ingredients.
Cooked on medium heat never leaving the pot unattended and in about 15-20 min it’s done then stir and enjoy!
